If you have a machine, I would say it is worth a try. If you find the flavour too strong, try adding mint extract or orange extract to hide the coconut. Or you could just use cream instead of the Coconut milk. On a similar track, did you know you can whip coconut milk into whipped "Cream"? I tried this at a family gathering in spring where there were several vegans, and it was great.
